One Pot Keto Sasame Chicken and Brokoli


Ingredients
  • 1 pound boneless, skinless chicken breast, cubed
  • 12 ounces broccoli florets
  • � cup coconut aminos, or soy sauce
  • 1 tablespoon avocado oil (I use this brand)
  • 1 teaspoon sesame oil
  • 1 � teaspoon arrowroot powder
  • 1 clove garlic, minced
  • � teaspoon sesame seeds, plus extra for garnish
  • Salt and pepper, to taste
  • Red pepper flakes, for garnish
  • Green onions, sliced, for garnish



 Directions
  1. Place the broccoli florets in a microwave safe bowl with 1 tablespoon of water and cover with a damp paper towel.
  2. Microwave for 2 minutes until the broccoli is just becoming tender.
  3. In a small bowl, mix the coconut aminos and arrowroot powder and set aside
  4. In a large skillet over medium heat, add the avocado oil and garlic and saut� until fragrant, about 1 minute.
  5. Add the chicken to the skillet along with the salt and pepper, and saut� until cooked through, about 6 minutes.
  6. Once the chicken is just about done, add the sesame seeds, sesame oil and broccoli to pan and saut� for an additional minute before pouring the coconut amino mixture over top.
  7. Saut� for 1 to 2 more minutes until all ingredients are well incorporated.
  8. Garnish with red pepper flakes, sesame seeds and green onions, before serving.

Easy Healthy Chicken Broccoli Soup

Ingredients 1 large onion finely chopped 2 large carrots peeled and finely chopped 2 celery ribs finely chopped 4 garlic cloves crushed 1 bay leaf 1 tbsp dried mixed herbs 1 tsp chilli flakes/red pepper flakes (optional) 5 cups broccoli stems removed and finely chopped 6 cups chicken stock/broth (Home-made or good quality store bought ) 2 cups milk 2 tbsp cornflour/cornstarch mixed with 2 tbsp water 2 cups shredded chicken (I used rotisserie chicken) salt and pepper to taste lemon juice to taste Instructions Saut� the onion, celery, carrot and broccoli stalks in a splash of oil until soft and fragrant and just starting to brown (this takes around 10 minutes). Add the garlic, bay leaf and herbs and saut� for another minute before adding the chicken stock, milk and cornflour mixture. Bring to a simmer then add the broccoli florets and shredded chicken.
